Briar

A kettle sour loaded with whole raspberries until the tank blushes. Sharp, bright, and gone from the taproom by Sunday most weeks.

About this one.

Briar started as one-off number 14, brewed for a wedding at the arch in 2021. The couple got their beer, we got two hundred requests to brew it again, and the core range got a sixth member.

We sour it in the kettle overnight, then bury it in fruit: about 60 grams of raspberries per litre, which the accountant describes as emotional.
