About this lot

Chelbesa is a washing station in Gedeb, right at the southern tip of the Yirgacheffe zone, taking cherry from around 500 smallholder farms sat between 1,950 and 2,200 metres. This is our fourth consecutive year buying it — the 2025 harvest landed at Immingham in March and cleared our cupping table at 88 points.

The cherry is floated, pulped and given a 36-hour water fermentation before drying on raised beds for two weeks. That long, cool fermentation is where the jasmine comes from; the altitude gives it the acidity that holds everything up.

We keep the roast short and bright — first crack at 8:10, dropped 95 seconds later — because this coffee doesn’t need help from the drum. It needs staying out of the way.
